Heart Beet Cookies

A Valentine’s Day treat in the Maintenance Car!

Ingredients

  • 1 and ½ cups gluten-free all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon sea salt

  • ¼ cup frozen-thawed or boiled fresh beats

  • ¼ cup Fair Life Milk

  • 2 tablespoons grade-A dark maple syrup

  • 1 teaspoon organic vanilla extract

  • 1 egg

  • 6 tablespoons real butter at room temperature

  • ½ cup organic coconut sugar

Baking Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Spray a cookie pan with Pam.

  3. Using a blender blend the beets, milk, maple syrup, and vanilla until mostly smooth. Add the egg and blend again.

  4. In a separate bowl cream, the butter and sugar together mixing well.

  5. Add the blended mixture to the butter and sugar mixture and mix until smooth. 

  6. Feel free to add a pinch of pumpkin seeds, Lily’s white chocolate chips, chopped walnuts, or pecan pieces at this time.

  7. Drop batter in tablespoon dollops onto the sprayed cookie pan.

  8. Bake for 8-10 minutes. Let cookies cool before removing to a cookie wire to cool completely. Cookies continue to bake a few seconds after first removing to the stovetop.
