Heart Beet Cookies
A Valentine’s Day treat in the Maintenance Car!
Ingredients
1 and ½ cups gluten-free all-purpose flour
1 teaspoon baking powder
¼ teaspoon sea salt
¼ cup frozen-thawed or boiled fresh beats
¼ cup Fair Life Milk
2 tablespoons grade-A dark maple syrup
1 teaspoon organic vanilla extract
1 egg
6 tablespoons real butter at room temperature
½ cup organic coconut sugar
Baking Instructions
Preheat oven to 350 degrees Fahrenheit.
Spray a cookie pan with Pam.
Using a blender blend the beets, milk, maple syrup, and vanilla until mostly smooth. Add the egg and blend again.
In a separate bowl cream, the butter and sugar together mixing well.
Add the blended mixture to the butter and sugar mixture and mix until smooth.
Feel free to add a pinch of pumpkin seeds, Lily’s white chocolate chips, chopped walnuts, or pecan pieces at this time.
Drop batter in tablespoon dollops onto the sprayed cookie pan.
Bake for 8-10 minutes. Let cookies cool before removing to a cookie wire to cool completely. Cookies continue to bake a few seconds after first removing to the stovetop.
