What is Dinosaur kale?

Dino kale is also known as Tuscan kale or cavolo nero (Italian for black cabbage.) It’s from the cabbage family and can grow up to three feet long. Like most kale it’s known for its super green benefits but unlike most kale it’s known to be sweeter and less bitter.

NUTRITIONAL BENEFITS

Dino kale fuels our body with vitamin A, C, and K upwards of 50% of the RDA. It also feeds us B vitamins, calcium, copper, fiber, iron, manganese, vitamin E, and includes for us powerful antioxidants. Italian doctors have been known to recommend Dino kale for weight loss as it is high in nutrition but low in energy. 


Super Simple Dino Salad Recipe

DIRECTIONS

Tear kale leaves into small pieces, wash, drain, and set aside. In a separate bowl place 1-2 soft avocados, sprinkle with sea salt, and squeeze one fresh lemon. Stir into a dressing consistency and toss with the drained Dino leaves. You’re finished!

AVOCADO ALTERNATIVE

For my Italian friends out there who hate creamy textures I have an alternative just for you. Add a few chopped garlic cloves and trade the avocado for olive oil. That’s yummy too!
